    Abstract: 橘黴素(Citrinin)是紅麴菌醱酵後的產物之一,是一種典型的黴菌毒素,對動物及人體均具有肝腎的毒害作用。目前紅麴中桔黴素的檢測方法主要有HPLC結合紫外檢測法、HPLC法結合螢光檢測法、ELISA免疫法等。但因所需試劑價格昂貴或靈敏度不高,未能普及應用。本計畫利用串聯式液相層析質譜儀檢測食品中之橘黴素,針對測試最佳操作條件之參數設定,檢測流程包括樣品經萃取、淨化等前處理後注入LC/MS/MS;LC/MS/MS的測定模式是利用負電荷模式來偵測。母離子經打碎後以掃描子離子m/z 251.2、233.0來做橘黴素的定性定量分析,檢量線R值0.9991符合歐盟要求之規範。
