    Title: 開發健康養身黑芝麻土司麵包及其營養成分之比較探討

    Abstract: 黑芝麻的營養價值非常高,其含有豐富維生素E:發揮抗氧化作用、維持血管壁的彈性;α—亞麻酸:能降低血壓、防止血栓形成;膳食纖維:能滑腸治療便秘;且鈣含量很高,素食者和不愛喝牛奶的人,可以一天吃三匙黑芝麻來補充鈣質。本計畫將黑芝麻運用在土司麵包的製作,並利用其含有高量的植物油取代一般土司麵包製作過程中所加入的奶油,減少膽固醇的攝取,開發健康養身黑芝麻土司。實驗結果發現,在麵糰中加入20%的黑芝麻粉最能顧及土司麵包的口感及其結構組織。
