    Abstract: 隨著生活的現代化與飲食習慣的改變,過度精緻的飲食與台灣外食人口數逐年的增加,易造成脂肪、蛋白質和醣類的攝取增加,而膳食纖維攝取卻減少的情況。若又有不吃蔬菜、水果之嚴重偏食問題,則因膳食纖維不足所引起的便秘、大腸癌等疾病機率將大幅增加,因此補充膳食纖維已成為最近營養保健的重要話題。本計畫利用天然穀物粉開發高纖、低脂之健康養身餅乾,期望帶給國人另一
    個補充膳食纖維的食物選則。
