    Title: 美和科技大學學生飲食營養知識、態度及行為之探討

    Abstract: 本研究目的是探討美和科技大學學生的飲食營養知識、態度及行為狀況及不同背景變項學生的差異。本研究以結構式問卷收集資料,以該校三個學院隨機抽取各二個系的一至四年級各一個班級學生為研究對象,包括食品營養系、健康事業管理系、企業管理系、資訊管理系、社會工作系、餐旅管理系,共582份有效樣本。研究結果顯示,「飲食營養知識」量表得分與年級及科系呈顯著相關,尤其食品營養系與餐旅管理系得分高於社工系及企管系;「飲食營養態度」得分以女生顯著大於男生,自覺體型胖者大於瘦者;「飲食營養行為」得分以男生大於女生、四年級大於一年級、社工系大於食品系。以皮爾森相關分析,顯視飲食營養知識與態度呈現正相關,而行為與知識及態度均無顯著相關。本研究建議應重視飲食營養知識或態度較高的女生及食品系的學生,其飲食營養行為反而較低的現象。; The purpose of this study is to verify the knowledge, attitude, and behavior towards nutrition in the students of Meiho University. We used structural questionnaire to collect the data. The 582 samples came from six departments in the school. The result showed that the scale of “Knowledge of Nutrition” was significantly associated with the factors such as “third grade”, “Department of Food Science and Nutrition” , and “Department of Hospitality Management ”. In the scale of “attitude towards nutrition”, the factors such as “female” and “those who consciously body fat” cause significantly higher score. In the scale of dietary behavior , the factors such as “male”, “fourth grade”, and “Department of Social Work“ cause significantly higher score. After analying with “Pearson correlation coefficient”, it showed significantly positively correlated between “knowledge” and “attitude”, but the “dietary behavior” is not. This study suggested that attention should be paid the students of females and food science who had higher nutrition knowledge or attitudes, but their behavior was lower.
