    Abstract: 發芽糙米是經由糙米浸泡在水中使其輕微發芽,發芽糙米被認為比白米健康,因為其比白米含有更多的維生素、礦物質及膳食性纖維。本研究是由6 位沒有服藥物的高膽固醇血症患者來進行發芽糙米對膽固醇代謝的影響,並搭配6 位健康自願者,維期12 週。發芽糙米對於高膽固醇血症患者之LDL-膽固醇有明顯的改善、而可增加 HDL-膽固醇的濃度,進而增加了HDL-C/LDL-C 的比率。但對於正常健康人在這 12 週中並沒有生化檢驗值的改變。由本研究結果推測攝取發芽糙米可以調節改善高脂血症。
