Abstract:	有機發芽黃豆之非必需胺基酸，包括精胺酸、甘胺酸、酪胺酸、麩胺酸、丙胺酸、胺酸、脯胺酸、天門冬胺酸及瓜胺酸等成份較未發芽提升0-8.67倍不等。有機發芽黃豆之必需胺基酸，包括色胺酸、纈胺酸、酥胺酸、離胺酸、苯丙胺酸、胺酸、異白胺酸、甲硫胺酸、及組胺酸等成份較未發芽提升3.83-6.45倍不等。
