    Abstract: 近年來台灣消費者越來越重視純天然無添加物的食品,市場導向以未加工過度、保留食物原樣的商品為主。市面上食品常見的保存方法大多使用「低溫烘焙技術」,這種製法會破壞食品本身的營養素,「冷凍真空乾燥技術」( Freeze drying)則能有效維持水果風味、營養、延長保存期限以及食用方便性。透過「產地直供」之方式,採購高雄在地農產品-鳳梨、芒果與吻仔魚,再以「冷凍真空乾燥技術」方式進行乾燥製備,以期最大程度保留農產品風味與營養素,並達到延長保存的目的。將乾燥鳳梨、芒果、玉荷包與吻仔魚融入傳統烘焙食品之製程與原料上,使達到創新與突破,除著重安全與衛生性外,更可帶動高雄在地農業與農產品的發展,全力促銷高雄優質農產品。
