    Abstract: 檸檬為屏東地區相當重要之經濟作物,由於種植面積廣大,常常因產量過剩而需進行簡易之加工(如:榨汁等)來增加保存的期限,然而榨完汁之檸檬皮卻無處可去,僅有少數廠商肯花費鉅資委託廢棄物處理公司進行處理,有鑑於此,如何發展發酵技術將廢棄檸檬皮再生成有價之健康食用商品,為本研究之主要動機,研究中將為廠商創造高附加價值之酵素產品,協助廠商解決三大問題,分別為:(1)農業廢棄物問題、(2)發酵技術轉型如何升級問題、及(3)半成品或成品指標化學成份鑑定及功效科學鑑定問題等;將藉由本校、國立屏東科技大學、國立成功大學三方面的合作,有效提高檸檬產銷農戶之基本收益外,並真正協助其進行發酵
    技術的轉型或升級,達到計畫的目的。
