    Abstract: 伴隨攝取肉類供需量理然突增,人們想方設法欲將其填補,卻不知其所挾潛在風險及生存危機儼然顛覆想像。針對人們食肉需求衍生環境災害痛點,提倡推廣國人素食良處效益,增升國內食品加工技術精熟度以利因應國際競爭力度,減少國內肉類食用供需求量,降低牲畜碳排放量,期望趨緩溫室效應所造成全球氣候異變、災害加劇等影響。考量設計因應國內全素、彈性食用素食者客群需求,以擬真肉類(混合肉、仿真肉)進行調味比例配方表研發,雖在外觀加工上尚未能達到食品市場龍頭—超越肉類等企業製程技術等級,但口感風味調配技術已然可與真肉相比,既符合目標客源經濟主流需求,亦能開創和市場現存商品與眾不同之處。
