    Abstract: 共生體發酵系統(SCOBY)係由酵母菌和醋酸菌組成,得到培養液含有醋酸、少量酒精、葡萄醣酸等有機分子。迷迭香是一種常綠多年生食用草本植物,屬於脣形科植物Rosmarinus Officinalis,廣泛用做香料和藥物,傳統上當作草藥治療與記憶有關的障礙、高血壓、頭痛、失眠和與記憶有關的疾病。迷迭香也應用於治療關節炎、頭皮屑和皮膚病,尤其葉子中的精油常被用作天然抗菌劑、殺蟲劑和驅蟲劑。迷迭香的治療特性歸因於植物化學成分,如酚酸、黃酮類化合物和萜類化合物。故本研究之目的探討迷迭香發酵物在抗氧化和酪胺酸酶抑制的影響,實驗過程先將迷迭香、酵母菌和醋酸菌共發酵後,分析項目包括抗氧化、總酚、酪胺酸酶抑制等。初步實驗已證實發酵物的抗氧化能力為41%,總酚620μg/mL且對細胞並無毒害,抑制黑色素生成約25%。
