    Abstract: 近年來,在開發健康美味糕點食品中,相當注重天然植物配方之觀念,嘗試結合陳年釀漬梅子與陳年花果醋經由日本釀造技術成為一種健康美味醬料作為基本原料,搭配多種食材開發「低卡洛里、低糖、低油脂、有益健康」的食品。藉由梅醋醬的營養價值與香醇風味不僅應用廣泛,風味與口感也足以利用日常生活之食材巧妙結合食用。以研發許多烘焙食譜來展現與梅醋醬調理出健康甜點。
