    Abstract: 本研究以不同來源的五種礦物質水沖泡淺烘焙/中烘焙/深烘焙咖啡,將泡出之咖啡液進行成分之分析,欲分析的項目包含(1)lactic acid乳酸 (2)malic acid蘋果酸 (3)citric acid檸檬酸 (4)quinic acid奎寧酸 (5)chlorogenic acid綠原酸 (6)acetic acid醋酸 (7)caffeine咖啡因 (8)eugenol丁香酚等。希望將此分析結果作為沖泡咖啡專用水之科學依據。
