    Abstract: 胞外多醣(EPS)是益生菌的代謝產物,最近已引起廣泛關注。我們分離鑑定了具有高胞外多醣(EPS)生產能力的雷氏乳桿菌Mh-001菌株,並將其用於研究EPS的抗發炎作用。在這三種未純化的EPS中,用5 ppm EPS 1處理的RAW246.7小鼠巨噬細胞顯示出最低的腫瘤壞死因子α(TNF-α)分泌(325.32±51.10 pg / ug DNA)。TNF-α分泌第二低的是Mh-002的EPS 2(701.12±86.108 pg / ug DNA)。從EPS 1中進一步純化EPS 4、5和6。用1 ppm EPS 4處理的細胞的TNF-α分泌最低(209.20±84.34 pg / ug DNA)。單醣組分EPS 4和EPS 1的半乳糖含量最高(分別為45±2.75%和39±2.75%)。單醣百分比(半乳糖>鼠李糖>葡萄糖)與EPS的抗發炎活性有關。EPS的半乳糖含量增強了它們對巨噬細胞的抗發炎作用。這些數據表明EPS具有有益的生理作用,例如抗發炎特性,並且EPS的單醣含量是影響抗發炎特性的因素。
